The weekend is finally here. It is brisk, and rainy today in my area, which means it is the perfect day to partake in one of my favorite activities, Fall baking. One of the many wonders of Autumn Is baking, and experimenting with the many ingredients that make the season so special. The warm aroma of cinnamon, and the earthy taste of pumpkin can take you away to another place. I have many fond memories of baking with my own mother from my childhood. I love to bake with my own children now, and see the joy on their little faces. Today, I would like to share a recipe that is both dear to me, and delicious! The recipe is homemade Pumpkin Pie.


For this recipe you can either use homemade pumpkin puree, or store purchased canned pumpkin. I always use pie pumpkin puree, and I will go over with you how to prepare your pumpkin. First, wash the pumpkin, and carefully slice it in half. Remove the seeds, and middle stringy pulp. At this point, you may either discard the seeds, or bake them for delicious homemade pumpkins seeds. Next, slice the pumpkin into small pieces, place in a large pot, and cook until fork tender, When pumpkin is a tender consistency, carefully strain, and allow to cool completely. Next, slice off the skins of your pumpkin, and mash in a large bowl with beaters. Now, we have prepared pumpkin puree ready to make a delicious pie!

To begin, preheat your oven to 400 degrees Fahrenheit.


1 store purchased pie pastry crust

2 cups fresh pumpkin puree, or store purchased canned puree

1 can evaporated milk

2 eggs, lightly beaten

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1 teaspoon ground nutmeg

1 teaspoon vanilla extract

3/4 cups brown sugar packed

Add all ingredients to a large bowl, and beat at low speed until well mixed. Next, pour into prepared pie pastry. Bake the pie for forty minutes, or until knife inserted into center comes out clean. Allow pie to cool, and serve with whipped cream if desired.
